Jaggery

Jaggery is used extensively in South India to balance the pungency of spicy foods. In Andhra Pradesh and Tamil Nadu it is used for sweets such as chakkara pongal and milk pongal, which are prepared with rice, milk, and jaggery. During Sankranti, Ariselu, an authentic Andhra Pradesh dish, is prepared.

Jaggery is a natural sweetener made from sugar cane juice or palm sap, commonly used across the Indian subcontinent and Southeast Asia. Jaggery can taste similar to fresh cane juice, maple syrup, caramel, or molasses, depending on its contents.

Jaggery enhances health by offering a lower glycemic index, rich nutrients, and antioxidants. It aids digestion, combats anemia, and eases menstrual pain. Jaggery may also relieve joint pain and support liver and blood detoxification
